The Buffalo 2023 Sauvignon Blanc - 12 Pack

VINEYARD REGION: King Valley

THE WINE: The Buffalo Sauvignon Blanc is a brilliant bright green, with aromas of passionfruit, gooseberry, papaya and green capsicum. The palate is zesty, bright, and generous, with vibrancy and life, lifting the array of exotic fruits long onto the palate with excellent mouthfeel and depth of flavour.

THE VINTAGE: The lead up to vintage 2023 was challenging to say the least. Experiencing a third La Niña year in a row made the 2022-2023 growing season a record-setting year from a weather perspective. With volatile weather conditions at flowering, crops were down in the King Valley, but fruit quality, and ultimately wine quality, is outstanding.

THE WINEMAKING: The Buffalo Sauvignon Blanc was picked on 18th of March at 11.4 baumé and at 12°C. The must was chilled and crushed to tank to sit on skins at 8°C for three days. This three day skin contact allows all the flavour in the skins to be released. The must was then pressed off skins and clarified ready for ferment. The juice was then inoculated with a Sauvignon Blanc specific yeast that unlock flavour precursors that give sauvignon its distinctive bouquet. The wine was fermented at between 14-15°C for about 20 days. Post fermentation the wine was pumped over to impart extra flavour and mouthfeel on the wine from the wine’s lees. The wine was then clarified ready for bottling.

FOOD MATCHES: Excellent with Thai-style baked lemongrass barramundi.
