VINEYARD REGION: King Valley
THE WINE: The 2023 Buffalo Pinot Noir is classic King Valley. A vibrant deep red, with lifted red fruit aromas of cherry, raspberry and strawberry with a background of violets, tarragon, toast and spicy oak. The aromas are echoed on the palate with morello cherry, forest fruits, a vibrant cool climate, cool vintage acidity, bringing life and intensity to the wine and its generous full fruited palate.
THE VINTAGE: The lead up to vintage 2023 was challenging to say the least. Experiencing a third La Niña year in a row made the 2022-2023 growing season a record-setting year from a weather perspective. With volatile weather conditions at flowering, crops were down in the King Valley, but fruit quality, and ultimately wine quality, is outstanding.
THE WINEMAKING: The Buffalo Pinot Noir was picked on the 31st of March, with a baumé of 13.0 and temperature of 16°C. The wine was crushed and chilled to a stainless steel tank and was cold soaked for 5 days at 5°C, the juice steeping in the skins to extract maximum colour and flavour while preserving the primary fruit characters. It was then warmed up and pumped over twice daily. It was fermented between 22-24°C with specially selected yeast isolated from the Burgundy region and was fermented to dryness on skins. The wine was pressed off to tank and kept warm where it underwent a slow secondary fermentation for two months. This allows for tannin polymerisation and colour stabilization, giving a silky mouthfeel, vibrant youthful colour and flavour complexity. The wine was minimally fined and filtered prior to it being bottled.
FOOD MATCHES: Excellent with duck ragu pappardelle with shavings of truffle and parmigiano.
