VINEYARD REGION: King Valley

THE WINE: A rich heady expression of Tempranillo, displaying aromas of blood plum and black cherry with hints of ground coriander and mocha that lead to a palate of dark berries, chocolate tannins and a rich textured finish.

THE VINTAGE: 2021 was the first in a trio of cool wet La Niña vintages creating a challenging yet positive growing conditions. Challenging because of the cool wet conditions but ultimately it was positive with healthy and a long cool growing season resulting in exceptional flavour intensity. Due to the weather crops were down in the King Valley, but fruit quality, and ultimately wine quality, through careful viticulture is outstanding.

THE WINEMAKING: The Buffalo Tempranillo was picked on 6th of April at 14.3 baumé and at 21°C. The must was chilled and crushed to tank to cold soak on skins at 8°C for three days. This three-day skin contact allows all the flavour and colour in the skins to be released before fermentation begins which allows extra time to fix them into the wine prior to pressing, achieving a deeply coloured intensely flavoured wine. The wine was pumped over skins for 7 days at 28°C. The wine was then pressed off to tank to finish both primary and secondary fermentation at 22°C.  Allowing the fermentation to finish and wine colour, flavour and tannin to bind together. A portion of wine was matured in 300 litre American oak casks and the remainder was matured in stainless steel tanks on high quality oak staves. After a year of slow maturation, the wine was blended and readied for bottle.

FOOD MATCHES: A perfect match for slow cooked Andalusian lamb.
