THE WINE: Our Chardonnay Pinot Noir offers aromas of crisp green and red apples, citrus and peach blossoms with toasty notes. The elegant palate, stylish mousse and balanced dosage are complemented by the focused acidity, refined flavours, and complex autolysis notes from lees ageing.

THE VINTAGE: This vintage’s growing season experienced a range of weather patterns that left their mark on the 2024 harvest. Winter rainfall initially provided essential moisture for the vines after harvest, but it tapered off towards the end of the season. Despite the unusual and unpredictable weather during spring, the new year brought perfect ripening conditions with warm, clear days leading up to and during harvest. Overall, the 2024 vintage displays immense promise, with moderate yields and exceptional quality and is the starting point for our NV blend.

THE WINEMAKING: The Chardonnay and Pinot Noir fruit for our sparkling was picked in late February and early March at between 10.5 and 11.0° baumé. The harvest was conducted in the early morning, and quickly pressed off skins into tank for fermentation with some solids to provide complexity and richness. Primary fermentation with yeasts isolated from the Champagne region in France are conducted at low temperatures in stainless steel to maintain maximum fruit freshness. The wine was left on yeast lees with weekly stirring to protect the freshness in the wine and add complexity. The principle behind blending our NV is that we finish with a stylistically consistent wine with greater complexity plus additional nuances of aroma and flavour. Using current vintage base wine as the starting point while blending in up to five previous vintages of reserve wine have been used to achieve this. The NV wine was Charmat fermented slowly at 14°C with the natural CO2 produced being retained in the wine. After completion of this secondary fermentation the wine was chilled and filtered off yeast lees. At this stage, the wine received a small addition of expedition liquor to provide the final balance and structure.
