Hidden Story 2024 Chardonnay - 12 Pack

THE WINE: This Hidden Story wine shows that Chardonnay is at its best in Victoria. Displaying alluring fresh aromas of stone fruit, cream and toast, intermingled with cashew nut and grapefruit. The palate displays intense flavours of nectarines, custard apple and grapefruit layered with hints of fig and toast. Subtle oak notes add complexity to the full flavoured palate that has a long rich finish. 

THE WINEMAKING: Harvested in the cool of the night, chilled and pressed to tank and left to settle for a day, after which the juice was racked clear to tank. The juice was then inoculated with specially selected Chardonnay yeast and fermented warm to encourage true varietal character.  This results in high levels of yeast that enrich the flavour and texture of the wine because it is mixed regularly to encourage silky, creamy autolysis.  The wine was carefully managed through MLF secondary fermentation to add further complexity and texture to the wine. After 9 months aging in tank the wine was clarified and minimally fined for bottling.

FOOD MATCHES: This wine matches wonderfully with Asian rice pancakes stuffed with crab and crayfish drizzled with a sweet tamarind sauce.
