Hidden Story 2022 Merlot - 12 Pack

VINEYARD REGION: Victoria

THE WINE: Ripe blackberry, blueberry and fruitcake aromas lead to an inviting and fleshy palate of ripe plum, red and black berry fruit flavours. Fine grained oak imparts delicate spice and vanilla flavours while adding mouthfeel and structure, leading to a soft, juicy finish.

THE WINEMAKING: The 2022 Hidden Story Merlot was picked in early April with a baumé
of 14. It was crushed to a rotary fermenter, inoculated with yeast and fermented at 24-26°C for six days. The fermenter was rotated six times thrice daily. The wine was then pressed off and underwent secondary fermentation in a stainless steel tank at 20°C. The wine was then allowed to mature unhindered in tank for 18 months on high quality oak staves before being prepared for bottling with minimal filtration and fining.
