The 2023 growing season was defined by a third La Niña year, bringing record-setting rainfall and unpredictable conditions. While yields were lighter, the cooler climate allowed Pinot Noir to ripen gradually, concentrating flavour and maintaining natural acidity. The result? A wine of balance, vibrancy, and depth - a true reflection of its King Valley origins.
Fruit was hand-picked in late March and cold soaked to enhance colour and aromatic expression. Fermentation with Burgundian yeast added complexity and structure, while gentle handling preserved Pinot Noir’s delicate fruit profile. A slow secondary fermentation created a silky texture, with minimal fining and filtration keeping the wine pure and true to its vineyard character.
