Hidden Story 2023 Sauvignon Blanc - 12 Pack

VINEYARD REGION: Victoria

THE WINE: Enticing aromas of passionfruit, green apple and lime are complemented by gooseberry, grassy and blackcurrant leaf notes. Ripe flavours of passionfruit, green apple and citrus drive a palate that is concentrated and elegant. The fresh and intense flavours coupled with crisp acidity provide a long, dry, and persistent finish.

THE WINEMAKING: The 2023 Hidden Story Sauvignon Blanc was picked in the third week of March at 12 baumé. The grapes were crushed and drained off prior to going to press to capture the lightest purest juice possible. The remaining must was then pressed lightly to prevent pickup of coarse grapeseed characters. The wine was then floated to a tank where it was inoculated with specially selected Thiolic yeast for ferment at 13-16°C. The ferment completed after 20 days, after which the wine was chilled and allowed to mature unhindered on yeast lees in tank for 9 months before being prepared for bottling with minimal filtration and fining
