The 2025 season gave us the perfect conditions: excellent spring rains followed by a warm, dry summer and autumn. The result? Even ripening, concentrated flavour, and one of the most compressed harvests in recent memory. From the first vineyard tastings, we knew this vintage would deliver something truly outstanding.
Harvested in the cool of night to preserve freshness, the Buffalo Prosecco was gently pressed and cool-fermented to highlight floral lift, fruit purity, and finesse. A second slow fermentation created its natural effervescence, resulting in fine, persistent bubbles and layers of complexity. A final touch of dosage balanced the crisp acidity into a refined, elegant style.
In the glass, The Buffalo 2025 Prosecco shimmers with a fine mousse and delicate bead. Aromas of elderflower, white nectarine, and citrus pastry rise from the glass. On the palate, crisp red and green apple meet bright citrus, wrapped in a vibrant line of acidity that carries through to a long, refreshing finish.
